Natasha’s Russian Snowballs
1 c butter, softened
½ c powdered sugar
1 teaspoon vanilla
2 ¼ c flour
¾ finely chopped walnuts or pecans (I used the food processer attachment on my blender to get them superfine)
¼ teaspoon salt
more powdered sugar (about 1 cup?)
Heat oven to 400. Mix butter, ½ c powdered sugar, and vanilla until smooth. Stir in flour, nuts, and salt until consistency is a firm dough. Shape into 1-inch balls. Place about 1-inch apart on ungreased cookie sheets. Bake until set but not browned, 10-12 minutes. Roll in powdered sugar while warm. Let cool. Roll in powdered sugar again.
Thor’s Candy-Cane Cookies
¾ c sugar
½ c butter
1 egg
2 tsp vanilla
1 ¾ c flour
½ tsp baking powder
½ tsp salt
½ c unsweetened cocoa powder
½ c crushed candy canes, plus more for topping
Cream butter and sugar. Then add egg, then vanilla. Sift together dry ingredients. Mix together. Dough will be very stiff. Roll into 1.5-2-inch diameter logs, chill in refrigerator overnight. Take out one log at a time and slice into rounds ¼ inch thick. Wipe knife every 2-3 slices as needed. Place on *greased* baking sheet, and make 18-10 min in 375 degree oven. While fresh out of the oven and still warm, top with a generous pinch of crushed candy canes and gently press down.
